Ingredients
- 300 g Greek yogurt
- 2 eggs
- 90 ml of olive oil
- Peel of an organic lime
- 60 ml lime juice
- 150 g of sugar
- 230 g flour
- 1½ tsp baking powder
- ½ tsp salt
Preparation
- Preheat the oven to 180 degrees top/bottom heat. Grease a small springform pan (preferably with a leak-proof base – the dough is very liquid!).
- Put the Greek yogurt, eggs, olive oil, and lime zest and juice in a mixing bowl and stir with the whisk.
- Then add the dry ingredients (sugar, flour, baking powder and salt) and mix all ingredients as short as possible to a smooth dough so that it does not become too firm later.
- Pour the dough into the springform pan and bake for 40 to 45 minutes (please make a stick test!). The cake should be golden brown.
Tip: If you want, decorate the lime olive oil cake with powdered sugar and lime zest (fine strips of the skin). Alternatively, a lime pour tastes good. Simply mix 200 g of powdered sugar with 5 tablespoons of lime juice and then cover the cake with it.
