Simple Recipe – Lime Olive Oil Cake

This cake recipe is ready in a jiffy: first stir in the moist ingredients, then fold in the dry ingredients and off to the oven!

Would you like a fresh, fruity cake? With this lime olive oil cake, you can dream straight to the Mediterranean. Thanks to the Greek yogurt, the cake becomes nice and juicy, lime juice gives the cake a delicious citrus note. This is what summer tastes like!

Ingredients

  • 300 g Greek yogurt
  • 2 eggs
  • 90 ml of olive oil
  • Peel of an organic lime
  • 60 ml lime juice
  • 150 g of sugar
  • 230 g flour
  • 1½ tsp baking powder
  • ½ tsp salt

Preparation

  1. Preheat the oven to 180 degrees top/bottom heat. Grease a small springform pan (preferably with a leak-proof base – the dough is very liquid!).
  2. Put the Greek yogurt, eggs, olive oil, and lime zest and juice in a mixing bowl and stir with the whisk.
  3. Then add the dry ingredients (sugar, flour, baking powder and salt) and mix all ingredients as short as possible to a smooth dough so that it does not become too firm later.
  4. Pour the dough into the springform pan and bake for 40 to 45 minutes (please make a stick test!). The cake should be golden brown.

Tip: If you want, decorate the lime olive oil cake with powdered sugar and lime zest (fine strips of the skin). Alternatively, a lime pour tastes good. Simply mix 200 g of powdered sugar with 5 tablespoons of lime juice and then cover the cake with it.
